Method

For the pastry:

  1. In a bowl, mix all the ingredients together until smooth.
  2. Wrap the dough in cling film and let it rest in the refrigerator for 30 minutes.

For the cream:

  1. In a small saucepan, bring the milk and the ReFlavor orange peel flour to a boil.
  2. In another saucepan, combine the egg yolks, sugar, and flour, then slowly pour in the flavored milk, stirring constantly.
  3. Cook over low heat for 4-5 minutes, stirring constantly, until the cream thickens.

Assembly:

  1. Roll out 2/3 of the pastry and line a tart pan.
  2. Pour the cooled cream onto the pastry base.
  3. Bake in a preheated oven at 180°C (350°F) for 35 minutes.
