Method
For the pastry:
- In a bowl, mix all the ingredients together until smooth.
- Wrap the dough in cling film and let it rest in the refrigerator for 30 minutes.
For the cream:
- In a small saucepan, bring the milk and the ReFlavor orange peel flour to a boil.
- In another saucepan, combine the egg yolks, sugar, and flour, then slowly pour in the flavored milk, stirring constantly.
- Cook over low heat for 4-5 minutes, stirring constantly, until the cream thickens.
Assembly:
- Roll out 2/3 of the pastry and line a tart pan.
- Pour the cooled cream onto the pastry base.
- Bake in a preheated oven at 180°C (350°F) for 35 minutes.
